สาคูเปียกข้าวโพด (serve 4)
170ml (2/3 cup) coconut milk
¾ ts salt
110g tapioca or sago
6 pandanus leaves
60g (1/4 cup) caster sugar
150g (5oz) young coconut meat in syrup, drained
In a small saucepan, stir the coconut milk with ½ tbs salt until cambined.
Bring 1 litre (4cups) water to a rolling boil in a medium saucepan. Add the tapioca and pandanus leaves and stir occasionally with a wooden spoon for 15 to 20 minutes while simmering over a medium heat. Stir until all the grains are swollen, clear and shiny. Reduce the heat if necessary. Add the sugar and ¼ ts salt to the saucepan and stir until the sugar has dissolves. The tapioca should now be almost cooked. Add the coconut meat and gently mix. Remove the pandanus leaves. Leave to thicken for 5 min before dividing among individual bowls. Drizzle coconut milk on top. Serve warm.
